The Châteaux de Lastours, nestled in the commune of Lastours in the département of l'Aude, are a collection of four historic castles classified as monument historique since 1905. The castles, each with distinct architectural features, are perched atop a rocky spur secluded by deep valleys of the Orbeil and Grésilhou rivers. They are built at an altitude of 300 m along a rock wall 1,300 ft (400 m) long by 165 ft (50 m) wide. Although Cabaret, Surdespine, and la Tour Régine stand together, Quertinheux is built separately nearby.
Archaeological investigations are ongoing, and in July 2026, the Royal Capetian Fortresses of Languedoc, including the Châteaux de Lastours, were designated as a UNESCO World Heritage Site. The natural layout of the site allowed for the construction of fortresses of great height. During the 11th century, probably only three castles were built on the site. The lords of Cabaret were closely linked to the followers of Catharism, and the surrounding villages welcomed many Cathars.
The castles were a centre of Cathar religious activity during the 13th century. The castle village sheltered numerous homes for 'Perfects' and served as a place of stay for the Cathar bishops Arnaud Hot, Pierre Isarn and Guiraud Abith. In 1229, the fortress launched the Cathar resistance in the Languedoc, a period known as the Guerre de Cabaret.
